Ingredients

  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 eggs (beaten)
  • 1/4 cup flour
  • Olive oil or cooking spray
  • 4 medium potatoes (Russet or Yukon Gold)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Optional: 1 tsp smoked paprika or garlic powder
  • Your favorite dipping sauce (ketchup, mayo, aioli, or ranch)
  • Fresh herbs (parsley or thyme) for garnish

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Cut potatoes into fries, soak in cold water for 10 minutes, then pat dry.
  3. Toss fries with olive oil, salt, pepper, and optional spices. Spread in a single layer on a parchment-lined baking sheet.
  4. Mix breadcrumbs, Parmesan, paprika, garlic powder, oregano, salt, and pepper in a bowl.
  5. Set up a dredging station with flour, beaten eggs, and breadcrumb mixture.
  6. Coat chicken in flour, dip in eggs, then press into breadcrumbs.
  7. Place chicken on a parchment-lined baking sheet.
  8. Bake chicken and fries for 20-25 minutes, turning fries halfway through.
  9. Ensure chicken reaches 165°F (74°C) and is golden brown.
  10. Slice chicken if desired, serve with fries, garnish with herbs, and enjoy with your favorite dip.

Notes
