Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.

- In a large bowl, beat eggs and sugar until light and fluffy. Add in vegetable oil (or melted butter), applesauce, and vanilla extract, mixing until smooth.
- Gradually fold the dry ingredients into the wet mixture, stirring until just combined. Avoid overmixing.
- Pour the batter into the prepared pan, smoothing the top with a spatula.
